    1.5 cup Whole Wheat Flour
    .75 cup Splenda (for Baking)
    1.25 tsp. Baking Powder
    .5 tsp. Baking Soda
    1 tsp. Ground Cinnamon
    .5 tsp. Ground Nutmeg
    .5 cup Unsweetened Applesauce
    .5 cup Better N Eggs (egg whites)
    1.25 cup Organic Pumpkin Puree (canned)
    2 oz. Dried Goji Berries


Pre-Heat oven to 350 degrees (325 for Convection ovens). Mix Wheat, Baking Powder, Baking Soda, Splenda and Cinnamon in Large Bowl. Add Goji Berries to Pumpkin and add along with Apple Sauce and Eggs to dry mixture. Stir ingredients until just mixed. Place paper cups in 12- muffin pan. Pour mixture evenly into cups. Bake for about 25 to 30 minutes depending on your oven... or until a toothpick inserted in a muffin comes out clean. Let cool about 10 minutes & ENJOY!!!
I like to re-heat in the microwave for about 15 seconds and spray on "I Can't Believe It's Not Butter" Zero Calorie Spray.
