    2 cans diced tomatoes - flavored is good
    5 eggs (I use omega-3 eggs from WalMart)
    2 oz cheddar cheese
    5 slices multi-grain or 100%whole-wheat bread


Pour tomatoes into skillet, heat on med to med hi heat, crack eggs into the tomatoes. Scoop the tomatoes out from under the eggs so they nestle down. Cover and poach until eggs are done. Shred or slice the cheese and divide among the eggs. Toast the bread, place 1 egg and 1/5 of the tomatoes on toast, serve.
