    3-4 Tbsp olive oil
    1 med onion, halved & sliced
    2 cloves garlic, finely chopped
    1 sm cauliflower, cut into florets
    1 tsp ground cumin'
    1/2 tsp turmeric
    1/2 tsp paprika
    pinch cayenne
    6-7 free-range eggs
    1/2 cup milk
    1 tbsp flour
    1 tsp baking powder
    sea salt & freshly ground pepper
    100 g paneer or feta, diced
    1/4 cup chopped parsely & dill or other soft herbs
    lime wedges & Greek yogurt to serve


Serves 6

Heat large frying pan over medium heat with 2 tbsp olive oil, Fry onion with pinch of salt until soft. Add cauliflower and garlic. Add more oil if needed and spinkle in cumin, turmeric, cayenne and paprika. Stir fry for 1 min. Add a squeeze of lime and a dash of water then cover and turn down heat. Cook until cauliflower is tender. Allow mixture to cool slightly.
Preheat oven to 180 C. Lightly beat eggs with milk, flour, baking powder, salt and pepper. Add the paneer or feta and chopped herbs. Combine with cauliflower and tip into an oven proof dish that has been lined with baking paper and brushed with olive oil. Trickle a tsp of olive oil around edge and a little over the top. Bake in oven until set in the middle and golden brown - 30 to 40 min. Let kuku rest for 10-15 min.
Serve warm or at room temp with Greek yogurt, lime wedges, fresh herbs and lavash or pita bread.
