Ingredients

    1 c. whole grain pilaf
    1 1/2 c. canned chick peas
    3 celery stalks, diced
    1/4 c. golden raisins
    2 scallions, chopped
    8 large pitted green olives, chopped
    8 c. arugula
    2 oz. feta, crumbled
    1/4 c. pine nuts
    4 slices turkey bacon, cooked and crumbled
    2 T. balsamic vinegar
    2 T. honey

Directions

Cook multigrain pilaf to package directions and allow to cool. Put all remaining ingredients except arugula in a large bowl and stir to combine. Put 2c. arugula on each plate and mound 1/4 of salad mixture on top. Serve.
