    1 lb 93% lean ground beef
    1 lb ground turkey
    1 can chili ready diced tomatoes
    2 cans tomato sauce
    2/3 c 3 pepper & onion mix, chopped
    2/3 c carrots, chopped
    2/3 c peas, frozen
    2/3 c corn, frozen
    1 can red kidney beans
    1 package 1.25 oz chili seasoning mix

    2 boxs jiffy corn bread mix
    2 egg
    2/3 c milk
    2 pack splenda


Using a 10" skillet that can be used to bake. 1/2 of recipe makes 4 servings. Make up chili, divide and make one box of corn bread for topper. Other half can be frozen to make chili bake a second time or bake in 9 x 13 using full recipe.

Chop vegetables as needed. Brown meat, drain. Add chili seasoning, tomatoes, tomato sauce and vegetables, stir well.

Mix up Jiffy size corn bread using egg and milk, I add one package of splenda to corn bread mixture.

When vegetables are well incorporated with meat, smooth surface. Spoon corn bread mixture over meat mixture and smooth out. It will probably not reach the edges of the pan but will be close when it comes out of the oven. Do NOT mix the corn bread into the meat mixture.

Bake at 400 degrees approximately 18 minutes. Makes 4 large servings.
