Introduction

The zucchini in this recipe make for a nice potatoe substitute.
I got this from Blanes Low Carb show, but I add some seasoning and eggs. If I have mushrooms and green onions, I will add that as well.

Number of Servings: 4

Ingredients

    1 zucchini, diced
    1/2 small onion, diced
    2 eggs, scrambled separately
    1/2 turkey ham, diced
    Mrs. Dash chipotle seasoning
    Pam spray

Directions

Scramble eggs separately

Heat up skillet and saute onions and zucchini until tender
Add ham and saute until browned
Before serving add scrambled eggs to pan and chipotle seasoning to taste


Serve with sour cream if you can have more carbs
