Ingredients

    nonstick cooking spray
    12 slices Ezekiel 4:9 bread
    2 cups sliced fresh mushrooms
    2 cups diced yellow onion
    3 cups fresh spinach
    salt and pepper to taste (1/8 tsp of each)
    2/3 cup lowfat cottage cheese
    2/3 finely grated part-skim mozzarella cheese
    5 eggs, beaten
    2 1/2 cups nonfat milk
    1 tbsp mustard
    1 tsp nutmeg

Directions

Spray nonstick skillet with cooking spray. Cook onions over medium heat with lid for 3 minutes. Add mushrooms and cover for 2 minutes. Stir. Add spinach over top, cover, and cook 3 minutes. Stir and set aside.

Spray 9X13 casserole dish with cooking spray. Place 6 slices of bread in bottom. Cover with half of veggies. Spread with cottage cheese. Place another layer of bread and cover with rest of veggies. Sprinkle with mozzarella cheese.

Stir together eggs, milk, mustard, nutmeg, salt, and pepper. Pour over layers in casserole. Cover and place in fridge overnight or until ready to cook.

Preheat oven to 350 degrees. Bake uncovered 1 hour or until bubbly. Serve immediately.
