    1 cup yellow corn meal
    1 cup all-purpose flour
    1 T. sugar
    1 tsp baking soda
    1/2 tsp salt
    1/4 cup canola oil
    1/2 cup milk
    1 large egg, beaten
    1 can yellow corn, drained


Sift dry ingredients together. Beat egg, add milk and oil and add to dry ingredients, stirring just until moist. Stir in canned corn. Pour into cast iron skillet sprayed with cooking spray. Bake at 350 degrees for 30 minutes. Cut into 8 pieces and serve. Makes 8 servings.
