Great meatless Chili Great meatless Chili

    1 TBSP Olive Oil
    Onions, raw, 1 cup, chopped
    Carrots, raw, .5 cup, grated
    Garlic, 3 cloves
    Green Peppers (bell peppers), 0.5 cup, chopped
    Celery, raw, .5 cup, diced
    Canned Tomatoes, 28 oz chopped, with liquid
    Mushrooms, fresh, 1 cup, pieces or slices
    Beans, Kidney beans dark red 1 can - with liquid
    Beans, pinto, 1 can
    Chili powder, 1 tbsp


Heat oil in a large saucepan over medium heat. Saute onions, carrots, and garlic until tender. Stir in green pepper, celery, and chili powder. Cook until vegetables are tender, about 6 minutes.
2 Stir in mushrooms, and cook 4 minutes. Stir in tomatoes,and beans. Season with chile powder to taste. Bring to a boil, and reduce heat to medium.
Cover, and simmer for 20 minutes, stirring occasionally.
