Potatoes and onions fried 'til crispy Potatoes and onions fried 'til crispy
Number of Servings: 9


    5 small potatoes
    1 medium onion
    half a red chili pepper
    quarter cup grapeseed oil (or other preferred frying oil)
    salt and pepper to taste


Boil potatoes in their skins for 10 minutes in rapidly boiling water. Remove peels (if desired) when just cool enough to handle (but while still quite warm). Grate or dice potato and onion coarsely into a bowl. Squeeze liquid out from the mixture and drain as much as possible. Add chili peppers, salt and pepper.

Mix and form into 9 palm-sized patties. Fry in oil until potatoes are nicely browned and a crust has formed.

Flip using a spatula when potatoes are golden brown. Continue to saute over medium-high heat until a light crust is formed on the second side, adding more oil if necessary.

You can serve this topped with sour cream, ketchup or plain.
