    90g (3/4 cup) all-purpose flour
    7oz. venison sausage
    38g finely chopped onion
    16g (1 T.) butter
    60g (1/2 cup) whole wheat flour
    1 cup 2 % milk
    6 cups hot water
    1/4 tsp. pepper
    about 3 tsp. seasoned salt
    1 tsp. onion powder
    2 tsp. garlic powder
    1/4 cup cream


Place the all-purpose flour into a large dry cast iron skillet over medium high heat. Stir until golden brown. Remove flour from skillet and place into a bowl. In a large sauce brown the sausage. Remove from pan. Melt butter in same pan and add onion. Cook and stir until lightly browned. Add sausage back to pan. Combine browned flour and whole wheat flour. Whisk in enough of the hot water to make a thin slurry. (about 2 or 3 cups). Add flour mixture to pan along with milk and seasoning. Bring to a boil while stirring. Boil for about 2 minutes. Adjust seasoning to taste. Add cream and remove from heat. Makes 17-100g servings.
