Number of Servings: 22

    2 cups whole wheat flour
    1 cup all-purpose flour
    1 T. sugar
    1-1/2 T. baking powder
    3/4 tsp. baking soda
    3/4 tsp. cream of tartar
    3/4 tsp. salt
    1/3 cup butter
    1 egg
    1-1/2 cups buttermilk

In a large bowl, combine all the dry ingredients. Cut in butter, until fine crumbs, rubbing with your hands if neccesary. Can place in the refrigerator overnight at this point if you wish. In a small bowl, whisk together egg and buttermilk. Stir into flour mixture until all flour is moistened. Scrape out onto heavily floured counter top. Sprinkle more flour on top. Knead lightly by folding edges in, about 7-10 times until dough is firm enough to handle. Pat dough to about 3/4 inch thickness. Cut with 2' biscuit cutter and place on lightly greased baking pan. Pat together any scrapes and cut again. Bake at 400 for 15-17 minutes or until lightly browned. Makes about 20 biscuits.
