Great little dish. Husband and I love it. Barely needs a side dish. Great little dish. Husband and I love it. Barely needs a side dish.
Number of Servings: 4

    4 Boneless, skinless chicken breasts
    1/2 c Fresh chives, chopped
    1/2 Medium onion, chopped
    1 tsp Garlic power
    1/2 c Dry white wine
    1 tbsp Dijon mustard
    1 tbsp Kosher salt
    1 c Flour
    1 tbsp Flour
1/3 c Fat free sour cream
1 can Reduced sodium chicken broth

1. Rinse chicken. With a meat mallet, beat chicken until about ½ inch thick. Lightly salt chicken with ½ tbsp salt. Dredge chicken in 1 c flour.
2. Heat two tsp olive oil in skillet. When hot, add chicken and cook until brown on both sides, not cooking thoroughly. (1-2 minutes each side) Remove from skillet and set aside.
3. Add to skillet the remaining tsp olive oil, chopped onion and garlic power. Coat onion with garlic powder and cook 2-3 minutes. Add the remaining 1 tbsp kosher salt and chicken broth, wine and remaining 1 tbsp flour. Bring to boil.
4. Once boiling, add chicken to the pan. Cook until no longer pink in the middle.
5. When chicken is thoroughly cooked, add Dijon mustard, and sour cream. Cook, while continuously stirring, until thick. When sauce is thick, mix in chives. Let sit for about 5 minutes with heat on low-medium, occasionally stirring then serve.
