Ingredients

    In a small bowl:
    2 T yeast in
    Ĺ c warm water
    1 T sugar
    (let bubble)

    In mixer:
    5 c hot water from tap
    7 cups whole wheat flour
    1/3 c gluten (not in original recipe)
    1 egg
    2/3 c honey or molasses (I like honey bestóbread is lighter)
    2/3 c cooking oil
    2 T salt

    5-6 c more whole wheat flour

    approx 1/2 tablespoon of butter for the tops after coming out of the oven.

Directions

Combine water and 7 cups whole wheat flour; add salt, oil, honey and egg. Mix for a long time about 5 minutes to get gluten working. Add yeast mixture. Mix well. Add 5-6 cups more of whole wheat flour letting it kneed in the mixer for 5-10 min. I add my flour 2-3 cups first then the remainder slowly while it is kneeding. Dough should be sticky but firm. Grease 4 bread pans. Make loafs and put directly into pans. Let raise 20 mins. Bake 350 for 40 minutes. After taking out of oven turn onto cooling racks and butter the tops. (Just rub butter over the top of the loaf while still warm)

Makes 4 2-lb loafs. I cut into 18-20 slices each. calculated for 72 slices.
