    1 - lite English Muffin
    6 - Red Ripe Grape Tomatoes, halved
    6 leaves - Basil
    1 piece - Light String Cheese
    1 tsp - Light Buttery Spread (like Smart Balance)
    1/2 tsp - Garlic, crushed or minced
    dash - Salt (optional)
    dash - Pepper (optional)


Preheat oven to 375

1) In a small dish, combine butter and garlic. Mix well, set aside.

2) Split English Muffin into halves. spread garlic-butter mixture evenly over both halves. Pull cheee into strips, and top each half of the muffin evenly with cheese. Place 3 leaves of basil on eash half, followed by the tomatoes.

3) Place on a non-stick baking sheet and bake inthe oven until cheese has melted and muffin halves are toasty (about 5 minutes).

4) Finish off with a dash of salt and/or pepper if desired.
