    Pizza Dough:

    10 oz (2 cups) flour
    6 oz water
    1/2 tsp. yeast
    1 tsp. salt
    1 tsp. olive oil

    1/4 c. peanut butter (I use Krema)
    1/4 c. hot water
    2 tblsp. soy sauce
    1 1/2 tblsp. brown sugar
    1/4 tsp. cayenne pepper
    1 1/2 tsp. lemon juice
    8 oz. boneless skinless chicken breast
    1 stalk lemongrass
    3 cloves of garlic, miniced
    2 carrots, diced small
    2 heads of baby bok choy, or one head of large bok choy
    1 tblsp. butter


In your mixing bowl, measure out your flour for the crust, add the water and salt, then dissolve the yeast into the water. Finish with the drizzle of olive oil and then mix until the dough comes together. Knead for 10 minutes or until you can pinch off a small piece of dough and make a translucent circle without tearing.

Let the dough rise for two hours while you prepare the sauce and toppings. (If you want to use a ready made pizza crust, this is where you come in. :) )

Make the sauce by combining the peanut butter and hot water in a small bowl. Mix until well combined and add soy sauce, cayenne, brown sugar, and lemon juice. Mix until well combined and smooth, then cover and set aside.

Dice your carrots, peel and mince the lemongrass, mince the garlic, wash and slice the bok choy stems and leaves.

Heat a pan with 1 tblsp, of butter, then add the garlic and let cook for 2-3 minutes before adding the bok choy and lemongrass and cook until the bok choy is mostly, but not quite, fully cooked. Reserve to a bowl.

Cook your chicken breasts in a bit of olive oil, then remove them and let them rest for a few minutes before slicing into strips you can put onto the pizza.

Once the dough has risen, pre-heat your oven to 450 degrees, re-knead it, form it into a ball and let it rest covered by a towel for 10 minutes, then roll the dough out onto a floured board.

If you're using a baking stone, lay the dough out on a peel lightly dusted with cornmeal. If you're using a baking sheet, dust it with cornmeal and lay your dough out, then lay out the sauce, carrots, and chicken and bake for 10 minutes.

At 10 minutes, open up the oven and add the bok choy/garlic/lemongrass mixture, then return to the oven for 10 more minutes.
