Introduction

Number of Servings: 8

Ingredients

    2 lbs chicken breast, small cubes
    20 Corn tortillas
    8 ounces shredded cheese
    3 Cans Green Enchilada Sauce
    6 Green onions, chopped
    Black and Green Olives slices
    Cilantro - as much as you like

Directions

Cut chicken and saute with half of the onions and cilantro. Add one can of sauce. In another pan, saute remaining green onions and cilantro for 2 minutes. Add remaining 2 cans of sauce. Spray 9 x13 inch pan with cooking spray. Put sauce in bottom of pan to cover. Dip tortillas in sauce and layer tortillas, chicken and cheese till all used. Top with remaining sauce and cheese. bake at 350 degrees till bubbling. May want to use broiler to toast cheese.
