    1/2 c 1% milk
    1 T lemon juice
    1/2 c whole-grain oat flour
    1 large egg white, lightly beaten
    1/2 t baking soda
    1/4 t vanilla extract
    1/4 t salt
    1/2 c fresh/frozen (not thawed) blueberries
    Spray Butter of choice


Preheat oven to 200 F.

In a small bowl, combine the milk and lemon juice and let sit for 5 minutes, or, you can substitute low-fat buttermilk for the lemon milk. Add flour, egg white, baking soda, vanilla, and salt. Whisk just until blended. Stir in blueberries. Let stand 10 min.

Heat a griddle to 350 F. Lightly spray with spray butter. Pour the batte in 1/8 c dollops onto the griddle. Cook about 2 minutes, or until bubbles appear on tops and the bottoms are golden brown. Flip. Cook about 2 min. more. Transfer to oven-proof plate and cover with aluminum foil. Place in oven to keep warm until ready to eat. Makes 8 pancakes.

Place 4 pancakes on each of 2 serving plates. Top with spray butter, sugar-free syrup, and/or fruit spead if desired!
