Southern style squash casserole. Southern style squash casserole.
Number of Servings: 3


    Summer squash, 3 cups sliced
    Onions, raw, 1 cup, chopped
    Sour Cream, 3 tbsp
    Colby and Monterey Jack Cheese shredded, 0.33 cup
    Nature's Own Honey Wheat Bread, 24 oz. sandwich loaf, 1 slice, 1 oz (You can use any bread you have on hand.)


You can replace the toast with bread crumbs that you buy, but use them sparingly because the texture of the store-bought bread crumbs can make the dish grainy.


Toast 1 slice of bread and set aside.

Heat 1 tbsp of olive oil in a pan, and then add sliced squash and sliced onions to the pan
Pour 1 tbsp of olive oil over the top
Stew the squash and onions on low heat until soft (you may need to add water to get the squash and onion to cook down)

Mix the stewed squash and onion with 3 tbsp of sour cream and put in a casserole dish.

Sprinkle the shredded cheese on top.

Crumble the toasted bread over the cheese.

Broil the casserole until the cheese melts.
