A tomato based chili that can be made within an hour. A tomato based chili that can be made within an hour.
Number of Servings: 5


    1 can of pinto beans
    1 can of diced tomatoes
    1 packet of chili seasoning, or 1 tbls each of cumin and chili powder + 1/2 tsp of black pepper or to taste
    2 cups of shredded or chopped cooked chicken (I used half a rotisserie chicken)
    1 16oz jar of salsa, preferably a roasted veggie variety
    1 medium onion
    1 cup chopped green pepper or more to your taste


Chop the onions, chicken, and bell pepper. Add to a large sauce pan. Add the salsa, tomatoes, and chili seasoning. Stir together. Cook for about 45 minutes just so that all the flavors are blended and the veggies are tender. Serve with your favorite chili toppings.
