Number of Servings: 6


    2 eggs slightly beaten(1/2 cup eggbeaters)
    2 cups seasoned stuffing croutons(stove top stuffing mix)
    1 cup chicken broth(used homemade)
    1/4 cup low fat shredded cheddar cheese
    2 cans(7 oz) salmon-drained, no bones or skin


In a bowl, combine the first 5 ingredients. Add salmon and mix well. Transfer to a slow cooker coated with nonstick cooking spray. Gently shape mixture into a loaf. Cover and cook on low(I use keep warm) for 4-6 hours or until internal temperature reads 160 degrees.
