A low cal take on traditional chicken salad like I used to make when I was thin and young. A low cal take on traditional chicken salad like I used to make when I was thin and young.
Number of Servings: 4


    2 Tbsp Light sour cream
    1 Tbsp light mayonnaise
    juice of 1/2 lemon
    1/2 Tbsp curry powder (or to taste)
    1 tsp celery seed (can also use celery salt)
    2 tsp granulated sugar ( may substitute 1 pkt of Splenda)
    2 chicken breasts (boiled, with skin and bones removed)
    1/4 cup red onion chopped


1. Cook chicken in boiling salted water until done. Cool.
2. Remove skin and bone. Cut chicken into cubes the size you like.
3. In mixing bowl combine sour cream, mayonnaise, curry powder, celery seed, sugar and lemon juice. Mix well with spoon.
4. Add chicken to dressing and mix well.
5. Dried cranberries or fresh grapes and nuts may be added for more texture.
6. Serve over a bed of lettuce or as sandwich in whole wheat pita pocket stuffed with veggies!
