    2 Tbsp of olive oil
    10-13 oz can of chicken
    1 tsp of minced garlic
    2Tbsp on taco seasoning
    2 10oz cans of red enchilada sauce
    1 16oz can of fat free traditional style refried beans
    2 cups of shredded cheese (cheddar or mexican style)
    8 burrito size flour tortillas


Heat olive oil in frying pan and add chicken, garlic and taco seasoning. Heat thoroughly, add water, refried beans and 1/2 can of red enchilada sauce. Stir and cook for about 5 minutes. Top each tortilla with bean and chicken mixture and top with cheese. Roll each tortilla into desired shape and place into a 9x13 greased pan. (You can either refrigerate or freeze at this point and bake when ready to eat, or freeze half the recipe to make later). After arranging all tortillas cover with remaining cheese and remaining enchilada sauce. Bake on 350 for 20 minutes covered.
