    2 10 oz. bags thawed Cauliflower
    1 med. Oinion, chopped & suated
    1 c. Shredded Cheddar Cheese
    1 c. Cottage Cheese, Low fat prefereably
    4 eggs, whisked
    1/2 tsp. salt or Ms Dash Seasoning
    1/4 tsp. black pepper
    Paprika to sprinkle top


Thaw & chop cauliflower into 1/4 in. pieces. Set into deep bowl, add whisked eggs, cottage cheese, cheddar & cooled sauted onions. Mix well till all is evenly distributed.

In large baking dish, spray with PAM & fold engredients into & distribute evenly. Sprinkle with Paprika & extra topping of Cheddar Cheese if desired. Bake at 400* for 45-60 min. Less if you like it a little softer, we prefer it a little Crispy.

This makes a great substitute for Potatos Au Gratin & can be 'dressed up' with additions of cooked sausage, ham or bacon & topped with sour cream. Just remember the additional calories & carbs!

    I thoroughly enjoyed this recipe. It reminded me alot of my grandmother's homemade macaroni and cheese, although much healthier. I will definitely keep this recipe handy and make it again in the future. - 2/1/10

    This was DELICIOUS!! I used 1% cottage cheese and low fat cheddar. My version ended up being 137 calories 5g's of fat. I also added a tablespoon of dijon mustard and some hot sauce to the liquid mixture. Very tasty :) - 3/29/11

    Very awesome! I added a box of frozen spinach and about a third of a bag of whole wheat noodles to turn it into an entree... added a small baked sweet potato on the side and it was a healthy, filling meal! Thanks for sharing your recipe! - 12/3/10

    This was excellent. It could have been a bit cheesier, however that could very well be my fault. I used low fat cheddar...and low fat never melts as nicely. Still a keeper!! - 4/5/10
