Number of Servings: 4


    4 boneless, skinless chicken thighs
    2 Tlb canola oil
    4 green onions
    1 tsp roasted garlic
    1 small green pepper, seed cored & sliced
    4 small red potatoes, quartered
    9 oz pkg frozen artichoke hearts
    1/4 c red wine
    3/4 c water
    1 tsp instant chicken boullion, or 1 cube
    dash each thyme and black pepper


Heat oil in pan and add chicken to brown on all sides, approximately 10 minutes. Remove to plate and add vegetables. Stir fry quickly. Add wine and scrape up bits from bottom of pan. Add water, boullion and seasonings. Bring to boil, reduce heat to simmer, cover and cook 10 minutes. Add chicken back to pan, simmer 10 minutes more, uncovered, or until chicken is cooked through.
