Ingredients

    Cubed Beef
    4 Potatoes
    1 Squash
    1 Tbsp Cumin
    1 Tbsp Oregano
    Salt and Pepper to taste
    2 Clove Garlic
    1 Lg Onion
    2 Green Chiles
    1 Can Beef Broth

Directions

In a large pot, brown beef cubes. Add Onion and Garlic and brown slightly. Add Pepper, Cumin, Oregano. Add water to cover and simmer until beef is tender (1-2 hours).

Add Cubed potatoes, beef stock and water to cover, and simmer until nearly soft. Stir occasionally, but do not break up potatoes. Add cubed squash and green chiles (chopped in big pieces).

Makes about 8 servings.

Serve with tortillas or cornbread. Chopped up chile with cornbread mix makes good cornbread.
