Ingredients

1 medium onion, chopped
1 clove garlic, minced
12 oz or about 2 boneless skinless chicken breasts
2-4 Tablespoons hot curry paste
1 (14.5 oz) can diced tomatoes
1 can of water
1.5 green peppers, sliced
1 medium potato, diced
Brown rice, basmati rice, white rice, or couscous
Directions
In a large nonstick pan brown the onions and garlic
Add the chicken, browning it on all sides
Stir in the curry paste
Pour in the tomatoes, fill the can up and pour in the water
Toss in the peppers and potatoes
Turn to simmer, cook 45 or so minutes until thick
Serve over lots of rice with naan bread to help cut the heat!
