Introduction
Wonderful, yet heavy and very filling, muffins! Wonderful, yet heavy and very filling, muffins!Number of Servings: 12
Ingredients

Whole wheat flour
cinnamon
baking soda
slat
sugar
chopped walnuts
carrots
green apple
raisins
cocnut
eggs
butter
vanilla
Directions
Put dry ingredients (you may want to start out iwth 3/5 cp of whole wheat flour and add as needed) plus nuts, carrots, rasins, green apple (peeled and shredded will be a heaping cup), and coconut in a bowl and blend.
Make a well in the center of the batter and add eggs butter (melt in microwave then cool slightly), and vanilla.
Stir until well blended.
Fill muffin cups to top.
Bake at 375 degrees for 18-20 minutes. Muffins will be very dense.
Makes 12 regular sized muffins.
