Ingredients

    dry ingredients
    * 2 cups all-purpose flour
    * 3/4 cup sugar
    * 2 tsp baking powder
    * 1/2 tsp baking soda
    * Pinch of salt
    * 1/2 tsp cinnamon
    * 1/8 tsp nutmeg

    wet ingredients
    * 1/4 cup canola oil
    * 2/3 cup 1% milk
    * 1 egg lightly beaten
    * 1 tsp vanilla
    * 2 small ripe bananas, mashed

Directions

Preheat oven to 350 degrees.
In a bowl mix dry ingredients and make a well in the center.

In a second bowl mix wet ingredients (except bananas) together. Add the wet ingredients to the dry ingredients. Mix in mashed banana stirring only until just mixed. Makes 12 muffins.

You can add 1/3 cup of mini chocolate chips or 1/2 cup of raisins to this recipe but remember to add them to the nutritional information also since they are not included here.
