    2 conatainers of College Inn low fat/low sodium chicken broth
    2 stalks of celery, sliced thin
    1 cup of carrots, sliced on the diagonal
    2 bonless, skinless chicken breasts, cut into chunks
    2 packages of Shirataki noodles, rinsed & parboiled


Makes 8 servings

Place broth into a pot, along with celery and carrots. You may add onion if you like. Allow to boil for about 5 minutes while you cut the chicken breast. Add the breast to the broth when your vegetables are cooked halfway through. While the chicken is cooking, prepare the Shirataki noodles as directed on the package. When the chicken is done, add the noodles. Allow a couple of minutes to let the flavors blend. Serve with some parmesean cheese if desired.
