this is adapted from a cooking light recipe. lots of flavor! this is adapted from a cooking light recipe. lots of flavor!
Number of Servings: 4


    1/4 cup kalamata pitted olives - diced
    1/4 cup green olives - pitted - diced
    1 tbsp parsley - chopped
    1 tbsp dijon mustard
    2 tsp balsamic vinegar
    1 clove garlic - minced
    salt & pepper to taste

    1 lb pork tenderloin - cut into 8 pieces


grill pork pieces on grill until cooked - set aside
in a bowl mix chopped olives, parsley, mustard, vinegar, garlic, salt and pepper. spoon tapenade over pork (2 tbsp per serving). Eat with Orzo or another mild flavored side.
serves 4.
