Introduction
Some simple breakfast burritos, it's intended to be a full meal when your on the go and don't have a whole lot of time, so make them in advaced. This recipe is for just one, but I like to make a big batch and freeze them so I can grab one and heat it up later in a microwave or an oven. Ingredients

* 1 Whole wheat tortilla
* 1 egg
* 1 small potato
* 1 mushroom
* 2 T salsa
* 1 t olive oil
* pinch of salt and pepper
Directions
Preheat the oven to 425 degrees.
Beat the egg and then fry it in a pan (scrambled)
chop up the potato and mushroom into bite sized pieces, toss in olive oil, salt and pepper. Throw it on a cookie sheet and bake for about 20 minute, or until the potatoes are nice and soft
Fill the tortilla with the scrambled eggs, and potatoes (if you made a big batch it's easy to divide out 1 egg worth, one potato worth... and so on) and the salsa.
Wrap it up in either saran wrap or aluminum foil (depending on what you have available to heat it up later)
