This is one of my favorite dinner recipes by far!!! This is one of my favorite dinner recipes by far!!!
Number of Servings: 4


    16 ounces boneless, skinless chicken

    6 oz - Pineapple Juice
    1 T low-sodium soy sauce
    1 T honey
    2 cloves garlic, minced
    1/2 tsp - Cornstarch
    1/4 t red pepper flakes


1) Place juice in a baking dish. Add soy sauce, honey, garlic, cornstarch and red pepper to the dish and stir.

2) Slice chicken breasts into 4 4-ounce strips. If thick, pound out to flatten with a meat mallet or rolling pin.

3) Place chicken in the marinade and refrigerate for 2 hours or overnight.

4) Remove the chicken from the marinade; reserve the marinade. Preheat grill to medium heat or turn on broiler and place rack in the middle of the oven, about 6" away from the heat source. Grill or broil chicken for 4-5 minutes per side or until the meat is no longer pink.

5) Transfer the marinade to a small saucepan. Bring to boil over medium-high heat. Cook for 5 minutes, or until reduced by half. Pour over the chicken.

If desired, serve with Rice and Pineapple Mango Salsa on top of chicken. YUM!
