Number of Servings: 12

Ingredients

    fresh pasta lasagna sheets x 6 or regular oven ready noodles
    Half of a 1% fat cottage cheese, 1 tub light ricotta
    180 grams of partly skimmed mozzarella
    jar of ragu spaghetti sauce
    can of diced tomatoes
    1/ 2 bag of spinach
    1 yellow pepper
    mushrooms
    onions
    garlic
    1 lbs of extra lean ground beef
    1 lbs of extra lean ground pork

Directions

Saute mushrooms, garlic, onions and peppers. Add ground beef and prk and cook through
Add tomatoes and sauce.
Assemble lasagne, starting with layer of sauce, layer of noodles, layer of cottage cheese and mozzarella. Repeat once. Then top noodles with remaining meat sauce and add cheese. bake covered with foil at 350 then for last 10 minutes remove foil. Let stand for 5 minutes. makes 12 servings. Enjoy!
