Ingredients

    1 15 oz Can Reduced Sodium (if available) Black Beans
    1 15 oz Can Reduced Sodium (if available) Kidney Beans
    1 15 oz Can Reduced Sodium (if available) Pinto Beans
    28 Oz Crushed Tomatos
    1 Medium Purple Onion, chopped
    3/4 C Frozen Sweet Corn
    3 Cloves Garlic, chopped
    2 Jalepeno Peppers, chopped
    2 Habanero Peppers, chopped
    1 T Oil
    1 T Chili Pepper
    1/2 T Cumen
    1 t Ground Red/Cayene Pepper

Directions

1. Set crock pot to "high." Add tomatoes and corn.
2. Drain and rinse beans, add to tomato mix. Stir.
3. Heat oil over medium heat. Add onions, cook 2 minutes. Add garlic and peppers, cook until onions are clear and garlic is roasted. Add to pot.
4. Add spices to mixture.
5. Let simmer on high for an hour. You may serve immediately, but flavors will be better if you reduce heat to low and let simmer longer, up to ~ 3 hours .
