    half onion, cut in large pieces
    red bell pepper, cut into pieces
    2 chicken breasts, cut into 1 inch chunks
    mexican seasonings
    1 tsp olive oil
    1 can kidney or mixed beans, rinsed and drained


Cook onions over medium heat for a few minutes. Stir in bell peppers and chicken. Cook until chicken is no longer pink.
Remove onion pieces (unless you happen to like them)
Stir in beans until heated.
Remove from heat and enjoy!
Sprinkle with cheddar or serve with tortillas or over rice for a complete meal (not in nutrition info).
