    2 tbsp olive oil
    1 med onion, diced
    1.5 lbs chicken breast, cut into sections 4 oz each
    1/2 cup balsamic vinegar
    1 can diced tomatoes (no salt-added variety)
    salt, pepper, garlic powder to taste


Season chicken sections with salt and pepper, to taste ( I used about 2 tsp each). Heat olive olive oil in large skillet over med heat. Add onions and cook about 2 minutes, until soft. Increase heat to med-high and add chicken. Brown chicken about 3 minutes on each side. Pour vinegar and tomatoes over chicken, reduce to med heat, cover and simmer until juices run clear, about 15 minutes.
Makes 6 servings.
