Ingredients

    3 c. chicken broth
    2 c. Idaho potatoes, cubed
    2/3 c. dill pickle liquid
    4 large dill pickles
    1 T. margarine
    1 c. sour cream
    1 pgk. Knorr's Sour Pickle Soup Mix
    salt and pepper to taste

Directions

Serves 6

- Combine broth, potatoes, soup mix and dill pickle liquid and bring to a boil.
- Reduce to simmer and cook until potatoes are tender (15-20 minutes).
- Mix in 4 large dill pickles (grated), 1 c. instant mashed potatoes or add an extra potato to the simmering potatoes, remove after 20 minutes and mash). This is used as thickening for the soup.
- Add margarine, salt and pepper to taste.
- Finish soup by tempering 1 cup sour cream with a small amount of hot soup then add it to the whole pot.

  • I haven't made this yet, but it sounds like the same soup I had yesterday at a Polish restaurant. It was is SO good! Now to try to find the Knorr soup mix so I can try making this recipe! - 9/20/10

    I had to go to a Polish Market to get it. I was told that you just don't go to Meijer or Kroger to pick it up.
