    2 cups Flour
    2 1/2 cups Quaker Oats 100% Natural Whole Grain oatmeal
    1 tsp Baking Powder
    1 tsp Salt
    1 tsp Baking Soda
    1 1/2 tsp Cinnamon, ground
    1 tsp Ginger, ground
    1/2 tsp Nutmeg, ground
    1/2 cup Margarine
    1 cup Granulated Sugar
    1 cup Brown Sugar
    2 Eggs
    2 tsp Vanilla Extract
    1 cup Raisins
    1 cup Cranberries, dried, sweetened (craisins)
    1/3 cup Orange Marmalade
    1 TBS grated Orange Peel


Blend together flour, salt, soda, bkg powder, cinnamon, ginger and nutmeg. Set aside. Cream margarine and sugars until the consistency of wet sand. Add eggs and vanilla. Add flour mixture and beat just until incorporated. Stir in marmalade, raisins and cranberries.
Drop by teaspoonful onto baking sheets sprayed with cooking spray. Flatten lightly. They will spread as they bake. Bake at 350 degrees for 12 to 15 minutes. Let cool on pans for 5 min, then remove to rack until cool. Makes 4 1/2 dozen cookies. Serving size is one cookie.

  • This recipe needs some editing. It does not specify when the oats get added in. I assume that the oats get mixed into the dried ingredients, although this is not always the case in oatmeal cookies. If you want stable cookies, it is probably a good idea to half the amount of raisins and cranberries. - 1/26/16
