    Egg beaters, 3 cheese & Artichoke Dip, (Friday's or other brand of creamy artichoke dip would work too.), shallots, flax meal seed.
    Olive or Canola Oil Spray

    Seasonings to taste: I used a Garlic, Rosmary and Parsley combo plus Pepper plus Dill.


Turn oven on broil to preheat. Raise top rack to about 6" below broiler.

Mix 1 3/4 cup Egg Beaters with 1cup three cheese artichoke dip. Add shallots, flax meal and then season to taste.

Spray cast iron (or other oven proof) skillet with oil. Put on medium heat. Pour in egg/dip mixture. Cook until loosely set, stirring to keep bottom from setting and cooking too fast. When getting done but still wet and slighlty loose, stop stirring, sprinkle shredded cheese over top.

Set skillet in oven for 5 to 10 minutes, just until eggs are set and cheese on top is melted, slightly toasted.
