    1/2 small onion
    1/2 tsp granulated garlic
    1 cup millet
    2 tsp chicken bouillon
    3.5 cups water
    1/2 cup parmesan cheese
    2/3 cup shredded carrots
    1 tsp oregano or thyme


1. Cook onions until tender.
2. Add garlic powder and millet and toast for a minute.
3. Add chicken bouillon and water and cook millet for 20 minutes with lid on.
4. Uncover, add cheese and carrots, and oregano. Continue to simmer and stir once or twice until mixture becomes similar to polenta, about 10 more minutes.
5. Remove from heat, cover with lid, and let stand for 10 minutes. Remove cover and let stand for 30 minutes.
6. Make 12 patties and refrigerator for 20 to 30 minutes.
7. Cook each side of patties for 3 to 5 minutes until nicely browned.

  • These cakes can form the base for a variety of toppings and sauces. I will definitely make these again, maybe experimenting with the herbs and added veggies for different flavors. They were easily formed and held shape during sauteing. I used homemade broth to reduce salt. - 10/29/10
