    2 cans navy beans, drained and rinsed or 4 cups cooked navy beans, divided
    1 can minced black olives
    1 can or 2 cups diced tomatoes
    1 jar sliced mushrooms
    1 med onion, diced, divided
    2 cloves minced garlic
    2-3 basil leaves, torn into small pieces
    cup cream
    2 tsp olive oil, divided
    tsp nutmeg
    Salt and pepper, to taste


Warm 1 tsp of olive oil in pan and add half of onion and 1 clove minced garlic. Cook until onion becomes translucent. Add navy beans, salt, pepper, basil, and nutmeg and cook until beans are heated through, stirring occasionally.

Measure out 1 cup of navy beans. Set aside. Transfer remaining beans to a blender. Puree beans, adding cream a little at a time until reaching desired smoothness. Set aside.

Add remaining olive oil to pan and heat. Add the remaining onion and garlic. When onion becomes translucent, add diced tomatoes, black olives, and mushrooms. Salt and pepper to taste. Cook, stirring occasionally, until well heated through.

Add puree and whole beans to the pan, stirring until all ingredients are well combined and heated through. Serve over linguini or pasta of choice.
