Ingredients

    16 cups Low Sodium Vegetable Broth
    2 cups sliced Mushrooms
    2 medium Onions diced, raw
    About 6 cloves Garlic
    1 cup chopped Carrots
    1 tsp Curry powder
    1 tsp tumeric
    2 tsp Oregano
    5 Potatos chopped
    1 1/2 TBS olive oil

Directions

sautee onions and garlic in oil
Add mushrooms, sautee a few more minutes
Add carrots and spices, sautee a few more minutes
Add broth and cook on medium high until it boils
Add potatoes lower heat and cook until done (about 60 minutes)
