Just threw this together as a quick and easy dinner Just threw this together as a quick and easy dinner
Number of Servings: 1


    1 pkg Manns Broccoli, Cauliflower and Baby Carrots (12 oz pkg)
    2.75 oz firm tofu, cubed
    1 tbs low sodium soy sauce
    a little less than a tsp sesame oil
    about 1 tbs olive oil
    dash of salt


In a small bowl, combine soy and sesame oil. Add tofu, toss to coat and place in refrigerator to marinate for 20 - 2 hours

When ready to cook, Preheat oven to 400. Line baking sheet with aluminum foil. arrange veggies on sheet, and drizzle with olive oil, toss to coat. Sprinkle with a pinch of salt.

Add tofu to tray, and place in oven

Roast for approx 60 minutes, turning once about 1/2 way thru.
