    1 pound whole wheat penne
    1 Tablespoon olive oil
    3 Tbs butter
    1 medium onion, chopped
    3 cloves garlic, chopped
    3 Tbs flour
    1/2 cup white wine
    2 cups milk
    freshly grated nutmeg
    1 10-ounce box frozen spinach
    1 10-ounch box artichokes
    black pepper
    3 cups (or 12 oz) shredded sharp cheddar


Makes 6 servings

preheat oven 400

Boil pasta, drain

saute onion and garlic in butter and olive oil until soft and tender. sprinkle flour into pan, stir. whisk in wine, stir. whisk in milk, stir alot. Add in chopped spinach and artichokes, stir for 3 or 4 minutes more. add in shredded cheese and stir until incorporated. Stir in cooked pasta.

Spread into pan, top with a little shredded cheese, bake in oven until cheese melted and browned a little.
