Introduction

This is a yummy pumpkin bread that I make using whole grain flours, less sugar than the original recipe called for, and extra pumpkin (you can use the whole can). This is a yummy pumpkin bread that I make using whole grain flours, less sugar than the original recipe called for, and extra pumpkin (you can use the whole can).
Number of Servings: 12

Ingredients

    1 C sugar
    1/4 C butter
    3 eggs (or 1 egg plus 2 whites)
    approx. 1.75 C pumpkin puree (use the whole can)
    1/3 C nonfat milk (can use water)
    1 teaspoon vanilla
    2 C whole-grain flour (any combination oats, barley, wheat)
    1/4 teaspoon baking powder
    1 teaspoon baking soda
    1 teaspoon salt
    1 teaspoon cinnamon
    1/4 teaspoon ground cloves

Directions

Cream butter and sugar together. Add pumpkin, eggs, milk and vanilla. Stir in dry ingredients. Pour into loaf pan.

Bake at 350 degrees F for about one hour. Test for doneness by inserting a knife or pick. It is done when knife or pick comes out mostly clean.
