Number of Servings: 4

Ingredients

    One skinless boneless chicken breast
    1 tsp. Garlic and small onion
    One 14.5 oz. can stewed tomatoes (italian style preferred)
    One 13.5 oz. can whole leaf spinach well drained
    1 cup brown rice prepared
    Various spices to taste Black pepper, cayenne pepper, oregano, italian seasonings

Directions

Saute garlic and onion in non-stick pan with non-caloric cooking spray.
Prepare brown rice according to instructions, 1/4 cup per serving.
Cut chicken into 1/2 - 1 inch cubes.
Pan saute chicken in garlic, onion and selected spices until cooked thoroughly (approximately 5-6 minutes). Reduce heat to medium.
Rinse and drain spinach very well and add to cooked chicken.
Add stewed tomatoes and heat for 2-3 minutes to ensure tomatoes and spinach are heated.
Serve over rice.
Garnish with fresh oregano of parsley.
Makes 4 servings.

    Very Good
    I made this and it was good! I actually doubled the recipe and cooked everything but the rice in the crockpot all day. There was a little too much spinach for my liking, but it was still really good. - 9/20/07
