Ingredients

    24 low-fat vanilla wafers
    6oz cream cheese, room temp
    24 oz fat-free cream cheese, room temp
    1 c sugar
    1 t. vanilla
    4 eggs

Directions

1) Preheat to 350, line muffin tins with foil cupcake papers. Place vanilla wafer in bottom of each.

2) In mixing bowl, beat cream cheese (both) until smooth. Add sugar and vanilla, mix well. Add eggs and beat till smooth.

3) Pour cheesecake mixture into muffin tins. Bake 20min or until centers are almost set. Cool. Refrigerate 2 hrs or overnight.
