    1 c. spaghetti squash
    1/2 c. chopped peppers
    1/2 c. chopped onions
    1 garlic clove crushed
    1 tbs. Extra virgin olive oil
    parsley and basil to taste
    1/4 block of tofu chopped in cubes


Cut Spaghetti squash open and place insides down in corning dish with a little bit of water covering the bottom. Microwave for 5 minutes.

Chop onions and heat small sauce pan at medium high. Spray pan and add tofu, onions, garlic, and peppers. Saute until veggies are softened.

Strip squash with a fork, use about a cup per serving and add to pot. Add EVOO and saute for a few minutes.
