    1 medium head cauliflower
    1 T. cream cheese, softened
    1/4 c. grated parmesan
    1 clove garlic, minced
    3 T. butter


Set pot of water to boil over high heat.

Clean and cut cauliflower in to small pieces. Cook in boiling water about 6 minutes or until well done. Drain well; do not let cool and pat dry between layers of paper towels.

In blender or food processor, puree hot cauliflower with cream cheese, parmesan, garlic and salt until almost smooth.

Add garnishes as desired (chives, butter, etc.) but these things are not included in the counts.
